Tell us about yourself and how many books you have written.
My name is Mathew James Moss. I’ve dedicated my career to promoting healthy eating through various programs and courses. Born and raised in the USA, my passion for cooking and nutrition has been a lifelong journey.
How did it all start? Well, as a high school student, I struggled with being overweight and was constantly bullied by my peers. It led me to believe that my happiness could only be achieved through strict calorie counting and dieting. This determination led me to pursue a career as a chef.
While I was studying, I worked part-time in small cafés to sharpen my cooking skills. After graduating, I secured a lucrative position at a prestigious restaurant. However, the demands of the job and constant exposure to rich, calorie-laden foods took a toll on my health. Doctors warned me about the onset of diabetes and worsening heart problems. During this time, I attended various courses on proper nutrition and experimented with numerous diets. One of the most significant challenges I faced was the misconception that healthy, low-calorie meals had to be bland and tasteless.
Discovering the air fryer was a game-changer. I realized that I could adapt many delicious recipes into healthier versions without sacrificing flavor. This revelation inspired me to compile my first Air Fryer cookbook, a collection of simple, healthy recipes designed to help everyone move towards a healthier lifestyle using just one appliance: the air fryer. Then I created another collection of Air Fryer recipes to help people simplify their cooking while improving their well-being.
Air frying was a good way out. But having a culinary degree, I soon found one more way to live a full life – it was the vibrant and flavorful world of Mediterranean cuisine, where every dish tells a story of tradition, passion, and nourishment.
So I began a different life, in which the pounds and health problems decreased and the number of my own recipes grew, leading to a newfound sense of vitality. Inspired by my own personal transformation, I set out to gather the best and easiest recipes to share the benefits of Mediterranean cuisine with others facing similar challenges.

What is the name of your latest book and what inspired it?
My latest book is HOLIDAY RECIPES.
This book is my answer to that challenge. I’ve compiled recipes for the most popular holidays in the U.S., from Thanksgiving and Christmas to the Fourth of July and Super Bowl Sunday. You’ll find dishes here that suit any celebration, from light appetizers and salads to main courses, sides, and desserts. Every recipe is crafted to bring joy without adding extra calories. My goal is to show that holiday meals can be both delicious and healthy. With this book, you’ll be able to diversify your festive menu, adding dishes that are wholesome yet sophisticated enough for any occasion. Cook with joy, savor the flavors, and create new traditions!
Do you have any unusual writing habits?

As a chef who promotes healthy eating through the Mediterranean diet and air fryer modifications, my most unusual writing habit comes from my approach to recipe creation. I often write with two versions of each recipe in mind — the traditional method and a healthier air fryer adaptation. It’s almost like writing two recipes at once, making sure that each retains its flavor and appeal while cutting down on unhealthy fats and unnecessary calories. I also like to incorporate a lot of visuals in my notes, imagining the final presentation as I write, because I believe food should not only nourish but also delight the eyes.
